At Birrificio Karma in Alife, craft beer becomes a conversation between Campanian soil and an uncompromising vision of what the drink can be.
In 2008, in the Alto Casertano area of inland Campania — a territory defined by layered agricultural traditions and a landscape that shifts between mountains and fertile plains — Mario Cipriano turned a homebrewer’s passion into a fully realised craft brewery. What has grown from that starting point in Alife, in the province of Caserta, is a producer that treats beer not as a commodity but as a form of expression: one rooted in place, shaped by curiosity, and built on a set of principles that refuse to bend toward the industrial mainstream.

Every beer produced at Karma is bottle-refermented, unpasteurised, unfiltered and free from preservatives. This is not marketing language but a philosophical commitment — a decision to allow the aromas, complexity and organoleptic character of each recipe to remain intact and alive. The brewery works with the foundational quartet of barley, hops, yeast and water, but it does not stop there. Into these classic structures, Karma folds ingredients drawn directly from the Campanian countryside: orange and lemon peel, Annurca apple, grape must, and other local raw materials that lend each beer a legible identity. These are not novelty additions but considered choices, each one a way of anchoring the beer to a specific geography and a specific culture of taste.
That rootedness is most fully expressed in the Classic Line, the brewery’s foundational range. These are beers conceived to reflect the rhythms of the countryside, the weight of tradition, and the breadth of Italy’s agricultural heritage. They are measured, balanced and considered — beers that reward attention. Running alongside them is La Vagabonda, a line that moves in a different direction entirely. Exploratory by nature, it draws on styles, aromas and influences from beyond the Italian peninsula, treating each recipe as a kind of itinerary. Where the Classic Line looks inward, La Vagabonda looks outward — a contrast that gives the Karma range its particular breadth and intelligence.
For more informal occasions, the K Line offers a pared-back, dynamic proposal suited to aperitifs, evenings with friends and the kind of spontaneous sociability that defines much of southern Italian life. The range spans IPAs, blanche beers, saisons and stouts, moving between fresher, more immediately drinkable expressions and recipes of considerable structure and depth. And for those who wish to extend the evening further, Karma produces Karmico, a bitter liqueur that carries the brewery’s sensibility into after-dinner territory — a natural conclusion to a meal anchored in the same philosophy as the beers themselves.

What distinguishes Birrificio Karma is not simply the quality of its output but the coherence of its position. In a region better known for its wines and its cuisine, the brewery has built a language of its own — one that translates landscape into flavour, tradition into technique, and local identity into something both specific and widely communicable. Remaining faithful to Alife while continuing to evolve its range, Karma is a producer that understands its own roots precisely well enough to grow beyond them.
