Located in Centocelle, one of Rome’s most storied residential neighbourhoods, L’Ingrediente Segreto has been a dedicated home for artisan fresh pasta since 2014. Founded by Andrea and Francesca, the project was born from a precise ambition: to return handcrafted pasta to the centre of everyday Italian life, celebrating it not as a special occasion but as a living, daily ritual. The kitchen produces fettuccine, tonnarelli, ravioli, tortellini, gnocchi, lasagne, paccheri and numerous other formats each day, every one shaped by hand and prepared to order.
The concept operates on what the founders describe as an all-Italian Street Slow Food philosophy — informal, accessible dining that refuses to compromise on care or quality. Guests choose their preferred pasta shape and sauce, then watch the dish come together before them, cooked express from scratch, much as it would be in an Italian home kitchen. Bronze dies are used throughout the pasta-making process, a technical detail that produces the porosity necessary for sauces to adhere properly — a quiet but telling measure of the kitchen’s commitment to craft. Wherever possible, ingredients are sourced locally and seasonally, in support of regional suppliers and reduced environmental impact.
Beyond the plate, L’Ingrediente Segreto positions itself as a place of transmission and discovery. The team, experienced in professional restaurant kitchens, takes particular interest in introducing younger and international guests to the traditions, regional identities and craftsmanship that each pasta format carries. The menu is completed by fried dishes and artisan desserts, all held together by the same guiding principle: simplicity executed with genuine attention.
